    Chef Alain Roux continues the Roux family legacy at The Waterside Inn, holding 3 Michelin stars for 38 years. A pastry master and Roux Scholarship co-chair, he also leads ventures like Le Normandie in Bangkok.

    CHEF MICHAEL NIZZERRO

    Michael’s UK career began in 2002 at the One-O-One Restaurant in Knightsbridge, London before moving to Pisces Restaurant in Dubai in 2004. Nominated as the best seafood restaurant between 2005 and 2007, Michael rose through the ranks to become Chef de Cuisine. He returned to the UK in 2007 to take the Senior Sous Chef role at The Waterside Inn, where he worked alongside Michel and Alain Roux.

    After four years, Michael was offered the opportunity to take the helm at the Relais & Chateaux property, Hostellerie La Briqueterie, Vinay, France, where he gained and held a Michelin Star as Executive Chef de Cuisine between 2011 and 2015. At 28, he was the youngest Michelin-starred chef in France at the time.

    In 2015, he became Premier Sous-Chef at The Ritz, London, working alongside Executive Chef John Williams MBE to achieve the restaurant’s first Michelin Star, before moving to the Bath Priory as head chef in 2017.

    Chef Michael is currently the Chef Instructor of the Waterside Inn’s new Culinary school where he runs the daily operations, staff training, and teaches several types of classes. Additionally he works closely with Chef Alain Roux on menu planning and food promotions for both the Waterside Inn and Le Normandie by Alain Roux in Bangkok. He is known for using fresh local produce and seasonal flavors to create contemporary French dishes.
